Spaghetti looks so simple but it is frequently on the menu at my house. However, it is seldom of the same variety. This spaghetti is not just carbonara or meatball - these sound very boring. My mom is able to create this menu to be any type of food, such as Japanese, Thai, Italian and it can be eaten at every meal. Mostly when our family has lunch at home, spaghetti will be at least one item on the menu along side other possible main courses, such as steak or other things.
I have many favorite dishes from my mom’s cooking but I will give two examples here. Firstly, it is cold spaghetti in a Japanese style. This menu combines the cold spaghetti with sashimi and the soy sauce but I’m not sure how to make it because I remember that it has to have the scent of white sesame. Secondly, it is a fusion of Thai and Japanese cuisine. The spaghetti is cooked with shrimp roe and eaten with grilled river prawn.
This menu is quite important for me because it is one of my mom's signature dishes and when I have no idea what to eat, actually, I will end up making this type of dish. It's also easy to cook; it just picks any ingredients in the refrigerator and mixes with spaghetti. I think this menu is always the meal in every family time and the important thing is everyone in the family enjoys it.
The memory that I have with this menu is all about family as I mentioned before. This menu brings me back to family time. Another memory that I have is when I make fresh pasta for everyone. My dad wanted me to make it and then he bought the machine to cut the fresh flour for me. When I made fresh pasta, my mom would make the sauce. Thus, we worked as a team.
Some say that Marco Polo introduced pasta after his trip back from China, but there is not enough clear evidence to confirm this. In addition to this myth about the origins of spaghetti, there are other stories about many types of pasta such as macaroni and lasagna. However, these dishes became more popular beginning in the 19th century because the factory was built and it helped people to reduce the time to make it. As before, people have to make by hand and it wastes a lot of time. Although the history of the dish remains a mystery, for me, it's importance in my life and family is clear: as a reminder of my connection to my family and, especially, my mother.
